    Best Bites Breakdown: Dough Mama Pie & Pastry

    California-born pastry chef Perrie Wilkof operates home bakery Dough Mama straight out of her Clintonville kitchen. After getting her degree in pastry arts at NYC’s International Culinary Institute, Wilkof baked in Brooklyn for a few years before making the move to Columbus. She now bakes pies, pastries, and quiches on the daily, offered at Katalina’s, Yellow Brick Pizza, and Mission Coffee, among others.

    Her fare for yesterday’s Best Bites Sweet Treats event was homemade Maple Bourbon Pecan Mini Pie, Dough Mama’s take on a traditional Southern pecan derby pie. The custard that filled each pie’s flaky butter crust was infused with Kentucky Bourbon and organic maple syrup, glazed over a crunchy pecan top. The bottom was lined with a generous layer of rich dark chocolate, and topped with a sprinkle of sea salt.
