The Dispatch wrote Skillfully prepared dishes stir winter joy

For some reason, the slowest restaurant months include January and February. It seems strange that, at a time when outdoor activity is throttled down for most people, one of the more pleasurable indoor activities — a necessity, even — is overlooked.
Maybe New Year’s resolutions — including ones about losing weight — are at least partly to blame. But we burn more calories during the winter, and judicious ordering can reduce the guilt factor.
At high-end restaurants such as the Refectory, huge serving sizes and mindless fat aren’t the norm — so even a dish with a cream sauce can be manageable when skillfully prepared.
